The E-mail field the Administrator tab will only list one existing administrator user on the platform. What defines an administrator user on the platform is the role to which he/she is assigned, which in this case is the admin role. The company can have multiple administrator users, but only one of them will be displayed in this informational field. In order for a particular user to stop being an administrator, you must remove him/her from the admin role. For more info, see the Platform ❙ Roles documentation.
